Amount of Minerals and Ascorbic Acid in Vegetables Submitted to Different Cooking Methods

Resumo
Os minerais e o ácido ascórbico constituem-se em nutrientes essenciais para o bom funcionamento do organismo e necessitam ser obtidos pelos seres humanos através da alimentação. Este trabalho objetivou analisar os teores de minerais e ácido ascórbico nas hortaliças: batata, cenoura e couve-flor, in natura e submetidas à cocção na água em ebulição, priorizando a menor quantidade possível de água, e no vapor. O estudo foi realizado em delineamento casualizado, com esquema fatorial 3 x 3 (3 vegetais x 3 tratamentos) e 3 repetições nas análises de minerais e 2 repetições nas de ácido ascórbico. De modo geral, os minerais não apresentaram diferenças significativas entre os tratamentos. Em relação ao ácido ascórbico, o tratamento térmico ocasionou significativas perdas. A cocção a vapor se mostrou mais eficiente na preservação do ácido ascórbico, enquanto para os minerais verifica-se a necessidade de mais estudos para melhor elucidar as possíveis questões interferentes.
Abstract
The minerals and ascorbic acid are in essential nutrients for a healthy body and must be obtained by humans through food. This study aimed to analyze the levels of minerals and ascorbic acid in vegetables: potatoes, carrots and cauliflower, fresh and subjected to cooking in boiling water, prioritizing the least amount of water and vapor. The study was conducted in randomized design with factorial 3 x 3 (3 x 3 treatments vegetables) and 3 replications in the analysis of minerals and 2 repetitions in ascorbic acid. In general, the minerals were not significantly different between treatments. Regarding ascorbic acid, heat treatment caused significant losses. The steam cooking is more efficient in the preservation of ascorbic acid, while for minerals there is a need for further studies to elucidate the possible confounding issues.
