Antinutrients and its Relation to Nutrition

Resumo
Neste trabalho é apresentada uma revisão abordando alguns antinutrientes que podem atuar como fator antinutricional e como compostos bioativos. As matérias-primas de origem vegetal possuem sustâncias que podem apresentar ação antinutricional, impedindo a disponibilidade de certos nutrientes. Os fitatos e oxalatos apresentam efeito negativo na absorção de minerais. Os taninos, juntamente com as proteínas, formam complexos, que são de baixa digestibilidade e insolúveis, tornando a proteína parcialmente disponível. As lectinas possuem capacidade de se combinar reversível e especificamente com açúcares e glicoconjugados. Os inibidores de proteases apresentam especificidade de inibir as enzimas proteolíticas, consequentemente reduzem a digestão e absorção protéica. Entretanto, recentes pesquisas têm demonstrado outros interesses sobre estes compostos, pois tais substâncias podem apresentar funções benéficas ao organismo, com ação antioxidante, antiinflamatória e de proteção ao câncer. Portanto, novas pesquisas nessa área são necessárias e é de suma importância avaliar criticamente os efeitos potenciais destes antinutrientes no organismo.
Abstract
This paper presents a review addressing some antinutrients that can act as anti-nutritional factor and as bioactive compounds. The raw materials of vegetable substances that have anti-nutritional action may have prevented the availability of certain nutrients. Phytates and oxalates have a negative effect on the absorption of minerals. The tannins with proteins form complexes that are of low digestibility and insoluble, making protein partially available. Lectins have the ability to combine reversibly and specifically with sugars and glicoconjugates. The protease inhibitors have specificity to inhibit proteolytic enzymes, thereby reducing protein digestion and absorption. However, recent researches have shown other interests on these compounds, because such substances may have beneficial effects on the organism with antioxidant, antiinflammatory and cancer protection. Therefore, further research in this area is required and it is very important to critically evaluate the potential effects of these anti-nutrients in the body.
