Trans Fatty: Control Experiments in Food Service

A Organização Mundial da Saúde (OMS) publicou, em 2004, o documento Estratégia Global para Promoção da Alimentação Saudável, Atividade Física e Saúde, preconizando como meta a eliminação do consumo de gordura trans (GT) industrial. O objetivo deste artigo é apresentar experiências de controle de GT em Unidades Produtoras de Refeições. Foi desenvolvido um modelo de método de controle com base na literatura científica que, após testado, originou o Método de Controle de Gordura Trans no Processo Produtivo de Refeições (CGTR). No início deste processo, foi realizada uma primeira experiência em um restaurante de Florianópolis – SC. As principais ações foram: identificação de ingredientes com GT, substituições de fornecedores, alterações de ingredientes de algumas preparações selecionadas, além de ações educativas junto à equipe e aos comensais. Conclui-se que o controle de GT na produção de refeições é viável, podendo contribuir na oferta de refeições nutricionalmente mais saudáveis.
abstract
The World Health Organization in 2004 published the Global Strategy for the Promotion of Healthy Eating, Physical Activity and Health; which advocates as a goal the elimination of consuming Trans Fatty (TF). The aim of this paper is to present the experiences of control of TF in restaurants. Based on scientific literature a model control method has been developed. After being tested, it resulted in the method of controlling the use of trans fatty in meal production - CTFM. Earlier in this process, we performed a first control experiment in a restaurant in Florianopolis, SC. The main actions were the identification of items with TF, following the replacement of suppliers and changes of ingredients of some selected preparations, as well as educational activities for staff and clients. It’s concluded that control of TF in the production of meals is feasible and can contribute in providing meals nutritionally healthier.
