RESUMO
A ficha técnica de produção é utilizada no planejamento de produção de refeições. Atrelado a isso como complemento pode ser acrescido o registro fotográfico. O estudo visa montar um registro fotográfico dos pratos proteicos padronizando o porcionamento com informações sobre o peso antes e depois do processo de cocção e fator de conversão. A coleta de dados e imagens ocorreu durante os meses de outubro e novembro, em balança digital. O peso das porções proteicas foram baseados no contrato firmado com a Instituição de Ensino Superior. Foram efetuados 24 registros fotográficos, identificou-se que a carne de frango assada e a lingüiça são os alimentos que perdem mais peso que pratos com molho. A unidade de alimentação está apta a controlar o custo dos pratos proteicos, estando em conformidade com o edital de contrato. O material produzido embasa a equipe de trabalho e serve como material educativo para os comensais.
ABSTRACT
The technical production is used in meal production planning. Linked to it as a supplement can be added using the photographic record. The study aims to put together a photographic record of the protein dishes standardizing the portioning with information about the weight before and after the process of cooking and conversion factor. The collection of data and images occurred during the months of October and November, a digital scale. The weight of the protein portions were based on the contract signed with the institution of higher education. 24 photographic records were made, it was identified that the roast chicken meat and sausages are foods that lose more weight that dishes with sauce. The power unit is able to control the cost of protein dishes, is in conformity with the contract notice. The material produced underlies the work team and serves as educational material for diners.
