RESUMO
O presente trabalho abordou questões relacionadas a utilização dos insumos nas aulas práticas do curso de Bacharelado em Gastronomia da UFBA- Universidade Federal da Bahia. Foram abordadas questões relacionadas ao uso consciente e responsável dos recursos alimentares disponíveis na instituição. Teve-se como objetivo destacar e demonstrar através de uma pesquisa de cunho quanti-qualitativa, a importância de uma correta utilização destes recursos, uma vez que, a falta de conhecimento sobre esta temática e a falta de políticas e planejamento da utilização dos alimentos dentro da instituição (utilização dos alimentos em suas diferentes partes, e em componentes curriculares diferentes), é o maior empecilho que foi encontrado ao decorrer dessa pesquisa. Foi encontrado grande quantidade de insumos sendo descartados, insumos esses, que poderiam ser utilizados em outros componentes curriculares para preparos de outras receitas. Por fim, busca-se demonstrar a contribuição nutricional que o consumo de partes não convencionais dos alimentos agrega a saúde o indivíduo, além de contribuir na diminuição da produção do lixo orgânico nacional.
ABSTRACT
This study addressed issues related to the use of inputs in the practical lessons of the course of Bachelor of Gastronomy UFBA-Federal University of Bahia. Addressed issues related to the use conscious and responsible food resources available in the institution. It had as objective to highlight and demonstrate through a quantitative and qualitative nature of research, the importance of a correct use of these resources, since the lack of knowledge on this subject and the lack of policy and planning the use of food in the institution (use of food in its different parts, and different curriculum components), is the greatest obstacle that was found over the course of this research. Was found large amount of inputs being discarded, these inputs, which could be used in other curriculum components for preparation of other income. Finally, we seek to demonstrate the nutritional contribution that the use of non-conventional parts of the food adds to the individual health, and contribute to decreasing the production of domestic organic waste.
