A escassez de alimentos que assola o planeta é algo preocupante, que poderia ser minimizado se os níveis de desperdícios fossem diminuídos, haja vista que estes agravam a situação da fome mundial. No mundo, o consumo anual de alimentos é de 375 milhões de toneladas, sendo que 37,5 milhões desse total provêm de vegetais in natura e 10% desse montante correspondem às folhas e talos aproveitáveis que são descartados, totalizando um desperdício de quase quatro milhões de toneladas. No Brasil, o descarte de hortaliças supera seu consumo, sendo que o per capta anual de ingestão é 35 Kg, contra 37 Kg que são descartados. O objetivo do presente trabalho foi quantificar as perdas de verduras em dois sacolões da região metropolitana de Belo Horizonte, bem como relacionar as causas do desperdício e compará-las com as descritas na literatura.

The lack of food that devastates the planet is something worrying that could be minimized if the waste levels were decreased, once it increases the situation of the world hunger. In worldwide annual consumption of food is 375 million tons, and 37,5 million from this total comes from fresh vegetables and 10% of this amount corresponds the leaves and stems that are discarded, totalizing a waste of almost 04 million tons. In Brazil, the discards of vegetables overcomes their consumption, and the annual per capita ingestion is 35 kg against 37 kg that are discarded. The aim of this study was to quantify the greens losses in two grocery stores of the metropolitan area of Belo Horizonte, as well as relating the waste causes and compares them with those described in the literature.
