Comparison of the Measured Temperature of Heated Foods With Different Types of Thermometer in Restaurant from Porto Alegre / RS

Resumo
O presente estudo teve como objetivo avaliar e comparar temperaturas de preparações quentes distribuídas em restaurante, utilizando-se dois tipos de termômetros (espeto e infravermelho laser) para identificar o mais adequado para controle de temperatura. A média das aferições com o espeto foi de 66,6ºC e com o infravermelho laser foi de 44,7ºC. A média do percentual de variação entre os termômetros indicou que as aferições do laser foram 32,8% inferiores. Os resultados das aferições com o espeto indicaram que a temperatura de distribuição dos alimentos está de acordo com a legislação (acima de 60,0ºC), conferindo segurança aos consumidores. Já as aferições do infravermelho laser foram inferiores em 100% das coletas, inferindo risco de proliferação microbiana. Observou-se que o termômetro espeto foi mais adequado quanto à confiabilidade das temperaturas. Sugere-se a realização de mais estudos, por não terem sido encontradas pesquisas comparativas avaliando os dois tipos de termômetro.
Abstract
This study aimed at evaluating and comparing temperatures of preparations using two types of thermometers (skewer and infrared laser) to identify the most suitable for temperature control. The average of the measurements with the skewer was 66.6°C and the infrared laser was 44.7°C. The media of the percentage change between the thermometers indicated that measurements of the laser were 32.8% lower.
The results of measurements with thermometer skewer indicated that the temperature of distribution of food is in accordance with the rules (above 60.0ºC), conferring security for consumers. The measurements of the laser were lower in 100% of collections, since they record the surface temperature of the food, inferring risk of microbial proliferation. It was observed that the thermometer skewer was more suitable according to the reliability of temperatures. It is suggested that further studies were not found by comparative research evaluating the two types of thermometer.
